Heat Distribution

This aluminum core has an amazing ability to conduct heat, which means you don't have to worry about uneven heating.

In combination with the smooth surface of stainless steel, you also get even frying, especially important when searing proteins - so you get a crispy crust on all sides. 

Heat Retention

The compact composition of the 5 layers of metal means that these pots and pans not only heat up quickly but also retain heat well. 

This results in being able to maintain the temperature and keep an even heat throughout the pot - or pan. 

This advantage comes especially into play when making risotto, where it's very important that the sides of the pot are almost as hot as the bottom of the pot - ensuring that the rice cooks evenly, no matter where it is in the pot.
