Pasta di salsiccia

Easy pasta dishes are always a hit, and this spicy one with salsiccia, garlic, and chili is no exception.

It's perfect for days when you need something quick but still want a delicious meal with lots of flavor.
If you can't find salsiccia, you can replace it with chorizo.

Optionally, serve the dish with a salad with fennel and vinaigrette.

Ingredients

4 servings

400 g pasta

1 small onion

3 cloves of garlic

1 handful of flat-leaf parsley

250 g salsiccia

25 g grated parmesan

Oil for frying

½ tsp. fennel seeds

¼ tsp. chili flakes

2 tbsp. tomato paste

2.5 dl heavy cream

Salt and pepper

Instructions

Cook the pasta in lightly salted water until al dente. Drain but reserve some of the cooking water.

Peel and chop the onion and garlic, and chop the parsley. Squeeze the sausage meat out of the casings, and grate the parmesan.

Brown the salsiccia in a hot pan with a little oil, then set aside. Add a little extra oil to the pan and briefly sauté the fennel seeds. Add the chili flakes, onion, and garlic, sauté for a couple of minutes, then add the salsiccia, tomato paste, and cream. Simmer for a few minutes. Toss in the pasta and season with salt and pepper. Adjust the consistency with some of the pasta cooking water if needed.

Top with parmesan and parsley before serving.
