Steak sandwich with onions, salad and blue cheese

Upgrade your sandwich repertoire with this incredible sandwhich with fried onions, blue cheese, arugula and tender slices of roast beef. The sandwich doesn't take long to make, and it beats the classic ham and cheese by a long shot. If blue cheese isn’t your thing, you can always use another kind of cheese instead. Feel free to choose one with a little flavor, such as a good gruyere or similar.

Serves 4

Butter for frying

4 good steaks, e.g. entrecotes

Butter and oil for frying

2 large red onions

100 g blue cheese

2 tsp. mustard

4 tbsp. mayonnaise

1-2 handfuls of arugula

4 small baguettes

Salt and pepper

Step by step

Fry the steaks in butter and oil in an ovenproof pan until they are pink. Season with salt and pepper. Set them aside and let them rest for 10 minutes before slicing.

Peel the red onions, halve them and cut them in generous long slices. Sauté them in butter in the same pan at even heat for approx. 5-6 minutes. Season with salt and pepper.

Crumble the cheese into small pieces and spread it over the onions. Place the pan in the oven under the grill function until the cheese is slightly melted.

Stir mustard and mayonnaise together.

Warm the bread in the oven, tear it lengthwise and add with mustard mayonnaise. Spread arugula, sliced beef and the fried onions with blue cheese in the bread.

Enjoy immediately.
