Meatballs in Tomato Sauce

Put genuine comfort food on the table with these juicy meatballs in tomato sauce, and be sure to make a large portion while you're at it. Meatballs in tomato sauce are particularly freezer-friendly, so there's easy food for a day when time is tight.


Enjoy them with pasta, gnocchi or polenta, or stuff them in a meatball sub and gratinate with cheese.


Ingredients

Serves 6

Meatballs

2 onions

2 cloves garlic

Oil for frying

100 g light bread

2 dl milk

1 handful flat-leaf parsley

1 handful basil

1 handful oregano

800 g ground beef

2 eggs

2 handfuls grated parmesan

Salt and pepper


Tomato Sauce

1 onion

3 cloves garlic

Olive oil

1 pinch chili flakes

2 tbsp tomato paste

1000 g tomato passata

1 pinch sugar

Salt and pepper


Garnish

Grated parmesan

Fresh herbs for garnish, such as oregano or basil

Pasta


Instructions

Meatballs

Peel and chop the onion and garlic. Sauté both in oil until the onions are translucent. Set aside and cool.


Soak the bread in milk. Pick and chop the herbs. Mix everything together with the onion, garlic, beef, eggs, parmesan, salt and pepper. Stir the mixture vigorously, form it into meatballs, and fry them in oil in a pan until they are golden and cooked through.


Tomato Sauce

Peel and chop the onion and garlic. Fry both in olive oil until the onions are translucent. Add the chili flakes and tomato paste, and fry briefly. Pour in the tomato passata and let the sauce simmer for 15 minutes. Taste and season with sugar, salt and pepper.


Toss the meatballs in the tomato sauce and sprinkle with grated parmesan. Garnish with fresh herbs and serve with pasta.
