Beef and Vegetable Stir Fry

This delicious and flavourful dish with tender strips of beef, vegetables, and oyster sauce takes no time to whip up. Feel free to vary the contents of the dish according to the season, and be sure not to overcook the vegetables—they should still have a bite.

The dish also tastes great with bell pepper, carrot, pointed cabbage, snap peas, sugar snaps, and mushrooms.

Ingredients

For 4 people
1 onion
3 cloves of garlic
200 g asparagus
200 g broccolini
500 g tender beef
Oil for frying
4 tbsp oyster sauce
1 tsp dark soy sauce
1-2 tsp sugar
1-2 tbsp fish sauce
A pinch of white pepper

Instructions

Peel the onion and garlic. Slice the onion into thin wedges, and chop the garlic. Trim the ends of the asparagus and broccolini, and cut them into bite-sized pieces.

Cut the beef into strips and brown them at high heat in oil in a frying pan. Set them aside.

Add a little more oil to the pan and sauté the garlic until it just starts to colour. Add the vegetables and continue to fry for about 2 minutes at high heat.

Add oyster sauce, dark soy sauce, and sugar, and toss in the beef strips. Add a little water if the dish seems dry. Season with fish sauce and white pepper, and add extra sugar if needed.

Serve with rice or noodles.
