Apple and Bacon
Æbleflæsk is a true Danish classic, where salty, smoked pork belly meets the sweetness of apples and onions. In Brian Mark's version, there is particular focus on structure and consistency, so the dish gets the right mouthfeel and bite.

Ingredients

1 kg
Belle de Boskoop (cooking apples)
450 g
450 g dry-cured, smoked pork belly
250 g
zittauer onions
15 sprigs
thyme
Pepper
Avoid screen shutting off

Instructions

Step 1/6
Cut the pork belly, apples and onions into rough cubes.
Step 2/6
Start by frying the pork belly over low heat until golden.
Step 3/6
Add the onions, which should not take on too much color.
Step 4/6
Then add the apples and the thyme and let everything simmer together until the apples are cooked through.
Step 5/6
Let the dish rest for 30 minutes – or even better, until the next day.
Step 6/6
Serve with coarse rye bread and mustard.
