Here you get the basic mayonnaise recipe with a little twist of olive oil from Brian Mark Hansen, who is the winner of Bocuse d'Or 2023. The recipe is based on one egg yolk, so if you want to make a larger portion, you can always scale up. You can make your own interpretations of the recipe and add the flavour you want. For example, you can replace the grapeseed oil with an herb oil instead, so you get an herb mayonnaise - perfect on tartare or carpaccio.

Ingredients

egg yolk
1 tsp
whole grain mustard
1 tsk
sherry vinegar
1 pinch
salt
1 pinch
pepper
200 g
grapeseed oil
A little olive oil (approximately 1 tbsp)
Avoid screen shutting off

Instructions

Step 1/4
Whisk egg yolk, mustard, sherry vinegar, salt and pepper into a homogeneous mixture.
Step 2/4
Add the grapeseed oil in a thin stream little by little, while whisking constantly.
Step 3/4
When you have a thick mayonnaise, finally add olive oil to give the mayonnaise a little edge.
Step 4/4
Tip: Make sure the ingredients are at the same temperature, then there is much less risk that your mayonnaise will split.
