Simple and delicious, yet full of exotic flavours. The chicken in this dish is marinated in wonderful spices from Mexican cuisine. If you have time enough, you can let the chicken marinate in the mixture for an hour or longer.
The chicken is accompanied by a fresh and spicy mango salsa with spring onions and coriander. This dish also goes great with sweet potato fries.

Ingredients
4 whole chicken thighs
3 tbsp. oil
2 tsp. paprika
2 tsp. chili powder
1 tsp. cumin
1 tsp. garlic powder
1 tsp. dried oregano
2 tsp. flake salt
1 pinch black pepper
Mango Salsa:
2 mangoes
¼ cucumber
1-2 green chilis
1 spring onion
1 bunch coriander
2 tbsp. olive oil
1 lime
Salt and pepper
Step by step
Split the chicken thighs at the joints. Mix oil with all the dry spices and rub the mixture on the chicken. Put the chicken in an ovenproof dish and put it in the oven at 180 degrees fan/200 degrees normal for approx. 40-45 minutes, until the chicken is cooked through.
Enjoy the chicken with the mango salsa.
Mango Salsa:
Peel the mango and cut into small cubes. Halve the cucumber lengthwise and scrape out the seeds. Cut it into small cubes. Chop the chili - discard the core and seeds. Finely chop the spring onion and chop the coriander.
Put it all in a bowl with olive oil, and season with lime juice, salt and pepper.
