The classic grilled chicken gets a run for its money from these butterflied quails in a spicy homemade BBQ sauce. Feel free to make a double batch of the sauce while you're at it — it also tastes delicious on pork, lamb, and beef. Enjoy the BBQ quails with baked potatoes, boiled corn, and coleslaw.

Ingredients

2 dl
ketchup
2.5 tbsp
apple cider vinegar
1.25 tbsp
brown sugar
1 tsk
garlic powder
2 tsk
paprika
1 tsk
cayenne pepper
1 tsk
salt
0.5 tbsp
hot sauce – or more if you like it spicy

Instructions

BBQ sauce
Step 1/1
Put all the ingredients in a pot, and bring the BBQ sauce to a boil until the brown sugar is melted.
Quails
Step 1/4
Cut the quails on each side of the backbone. Discard the bone, and rinse the quails for any offal remnants. Pat them dry with kitchen paper.
Step 2/4
Spread them out like a butterfly with the breast side up, season with salt and pepper, and brush them with BBQ sauce.
Step 3/4
Fry them on an oven rack at 220 degrees with hot air and grill function for approx. 15 minutes, or until they are crispy and cooked through.
Step 4/4
Remove the quails from the oven, and brush them again with BBQ sauce.
