Precision, sharpness and great design all in one knife
Carving and fileting fish, poultry and other meats requires precision and, most important of all, the right knife.
The Gastrotools boning knife ensures frictionless and precise cutting thanks to it's 15 cm narrow blade and ergonomic handle. The boning knife is perfect for fileting fish, deboning poultry or even removing the silverskin from a tenderloin.
A boning knife to complete your kitchen toolbox
The boning knife offers unique precision and sharpness, thanks to its 67 layers of steel. The core of the knife is made from VG10-steel and the steel combination creates a wave like design with a hardness of 60-61 HARC on the Rockwell scale. To put that into perspective, other kitchen knives typically have a hardness of 55 HRC. The hardness of the steel lets the knife stay sharper for longer and results in a knife that'll last you a lifetime. With this boning knife as part of your knife collection, you'll be ready for any and all cooking tasks

Innovative forging techniques and advanced materials
The knives from Gastrotools are characterised by extreme sharpness and durability. Every single knife is forged with a focus on aesthetic beauty and ultimate sharpness. Proud knife forging traditions in combination with innovative technology and unique steel blends, are what lays the groundwork for the ultimate kitchen knives. Kitchen knives that last a lifetime.

Incomparable hardness and sharpness
The kitchen knives forged from VG-10 steel are both harder and sharper than most other kitchen knives. This is in part due to the unique mineral composition with a very high carbon content. All in all this means that our kitchen knives achieve a hardness of 61 HRC on the Rockwell Scale, while other kitchen knives will typically be around 55 HRC. This also means that the knives keep sharp for a very long time.

Aesthetic beauty and ultimate sharpness
Our kitchen knives are forged with an extremely hard steel core. There are then 66 layers of protective stainless steel forged around the core. During production the steel is heated, hammered and cooled down many times. This is what creates the characteristic wave pattern and allows for optimal bonding of the metal.
